Sorry to line up a load of quotes and I know it was not your initial question but there are a couple of elements I'd like to raise. I hope I don't scare you but its worth your own research.
If you are quitting meat for moral reasons then you must be aware of the dairy industry which is quite horrific in comparison. If you are to quit one for moral reasons I'd go for the worse of the two and the one which provides less nutritional benefits.
The life of a Dairy cow is not a pretty one and death (as happens to beef stocks) would not be a bad option. Dairy cows are milk machines and every aspect of their short life is to provide maximum milk yield. It is quite shocking what they go through.

If you can find a reputable source (a local local butcher, not supermarkets) then to kill an animal for its meat is not half as cruel as having a glass of milk or a bar of chocolate.
If you want to do your moral bit towards animals then vegetarianism is an option but it is not the most beneficial option in the moral interest of the animals.
BTW: I eat meat and I drink milk, even though I do not agree with the practice it is a hard one to avoid and purposely try to limit my consumption (cornflakes just don't taste the same without milk).
