Nuts are good, and fairly versatile. They can also be transformed into a variety of forms (powder, paste) so they're easy to incorporate into foods.
I've gone vegetarian for a month on three separate occasions, mostly to try to lose weight. My advice would be to moderate dairy consumption, as it may ramp up significantly. Since it will probably be a substitute for a great deal of your protein, you may want to downgrade fat contents (I was drinking around three glasses of milk a day, and went from 1% to skim) since it's easy to overdo dairy.
I don't find it that hard to do, as a great deal of dishes have meat as an extra rather than a central part of the meal. I'd recommend looking into Vietnemese and Thai cuisine for some exciting ways to use vegetables. The main issue I've found with vegetarianism is that it's often boring unless you're a great cook (I am not), so look into disciplines that use a lot of spices.
